What is Kinsley's
Cookie Cart?

Kinsley’s Cookie Cart is a 501c3 non-profit that was born from Kinsley’s love of baking. While at face value, Kinsley’s cookies were the catalyst that started this non-profit – it is not as simple as a cookie cart. It’s not about selling cookies. It’s about using cookies to help spread awareness and provide support for pediatric cancer patients and their families.

Our Mission:

Kinsley’s Cookie Cart was formed to raise awareness, funding and support for pediatric cancer patients and their families.
While you can’t technically purchase Kinsley’s cookies, you will find Kinsley and her cookies available at all of our events. If you ask her how much they cost, she will say “whatever your heart desires.” Kinsley’s heart is huge. She turned a life threatening and extremely challenging situation into an opportunity to focus on all of the good in this world. If your heart desires, we would love for you to join Kinsley and help raise awareness and support for these sweet little fighters that are enduring the battle of their life.

Meet Kinsley & Her Board

Kinsley Peacock – Cancer Survivor
At the tender age of 4 years old, Kinsley was diagnosed with a rare eye cancer, retinoblastoma. After having her right eye removed and undergoing 6 rounds of chemotherapy, Kinsley beat cancer.

While running her own for-profit business since 2010, Kim constantly had a yearning to give back. She had no idea that her daughter’s cancer diagnosis would be the catalyst for her to start a non-profit. After conquering Kinsley’s diagnosis and seeing the joy that Kinsley spreads amongst everyone she meets, it was an easy decision to start Kinsley’s Cookie Cart.

Kim’s Goal:

Teach my children that you will find no greater joy than by being generous in your actions, kind in your words, and through acts of noble giving.
Jackie Griese
Jackie Griese – Kinsley’s Friend
Jackie has been an advocate of at-risk children for years from mentor, to board member, to financial supporter. Today, she continues to give back to help others move forward and Jackie is thrilled to be a part of Kinsley’s journey and Kinsley’s Cookie Cart. She believes through Kinsley’s Cookie Cart, many will be impacted in positive, uplifting ways.

Cari Raybourn
Cari Raybourn – Kinsley’s Friend
After personally experiencing the hardship of having a child with a medical condition, Cari has always had a strong desire to help other families navigate the medical world - from researching hospitals to understanding the insurance industry, it can all be so overwhelming. She knows that there are so many lives that can be touched and that together we can make a difference.

Loyal

Cari’s Favorite Quote:

Don’t worry about anything; instead, pray about everything. Tell God what you need, and thank him for all he has done.

Cari’s Goal:

Leave this world better than I found it. Helping people. Showing my daughter to walk by faith, chase dreams, love without reservation.
